When Charlie Cory of Big Steer Meats greets his customers, you can imagine his father doing the same when he started the company in 1978 on the east side of Saint Paul. Inside jokes with regular customers, friendly welcomes for newcomers, and recall of "the usual" orders for faithful snowbirds are all enjoyable parts of an honest- and busy-day's work. With a memory as sharp as his knives, and a business sense just as pointed, Charlie has grown Big Steer into more than just a thriving local butcher shop–which itself is no small feat in the modern marketplace. He has diversified. His wholesale food sales to restaurants and other stores account for nearly half of his revenue, and he's got designs for further, national growth in the works.

You can also imagine Charlie's grandmother pinching the cheeks of "my little Charlie" as he describes with delight the secret ingredients and process involved in the making of his Pietrafesa Spaghetti Sauce - available both at Big Steer and at many popular restaurants in the area. His contagious, down-to-earth friendliness, genetic knack for creating great-tasting food, and eyes-wide-open business savvy serve him well in the niche he has carved out for himself and his team - which nearly doubles each fall to operate his ingenious mobile butcher shop that serves the needs of his deer hunting customers.

"We keep it simple. But, we also listen to our customers and try to anticipate what they want," says Cory. His pre-stuffed, ready-to-grill Al Capone Italian Ribeye is an award-winning creative idea that has become one of his top sellers. A full selection of made-to-order deli sandwiches, frozen dinners and bulk Convenience Packs are "no-brainers" that Charlie has added to his retail offerings to meet the demands of his busy customers.
